Introducing Spring Song, a migratory blend
May Coffee of the Month is Spring Song; Point Pelee’s Festival of Birds
The voice of the forest for May is the chorus of our returning spring migrants! For May’s coffee of the month we have created a new special edition blend: Spring Song.
This coffee is a chorus of flavours! From its dark maple syrup aroma on the nose, to the long lovely milk chocolate aftertaste on cooling, various notes rise and fade. It opens with confusing complexity pulling towards a raisin-like fruitiness that persists through the aftertaste. Other fruits like peach and aromas of granola and florals like honeysuckle come in and out of “view” while the cup cools. Baking spices like nutmeg, anise, and even cardamom rise and fall. The raisin dives into an earthy plum, and just before it dominates, it opens into long soft landing in the middle flavours of maple syrup and milk chocolate.
This may sound over the top but if you read this while you are drinking it, and focus your attention, you might find each aspect “pop” into your perception. Like the famous illusion, “My wife and mother in law” are both really there, but we perceive one or the other by shifting our attention.
We recommend brewing this coffee at 3/4 strength, but try playing with it! It expresses itself quite differently based on how strong you brew it. Can you taste the dark maple syrup? Or something else? Wife or Mother in Law? Tell us in the comments.
